For our handmade gnocchi we use the organic potatoes we grow ourselves in the fields close to our vineyards. We dress gnocchi with a delicious handmade pesto (marble mortar, olive wood pestle and a lot of patience!) using the incredible basil of Prà, Ligurian extra-virgin olive oil, parmesan cheese, pecorino sardo (sheep's cheese), garlic from Vessalico and pine nuts from the Italian Riviera.
