Sancrau Piemontemare

Ingredients: cabbage, cotechino, sausage, ribs, salted anchovies, onion, garlic, vinegar, oil

It is assumed that the term "sancrau" is a mispronunciation of Sauerkraut, which in German means sour cabbage, but while in the German version the cabbage is fermented, in the Piedmontese one it is only acidulated.

The addition of garlic and anchovies made it a very popular dish.
