Ingredienti: chicken; filling of veal brains, sweetbreads, eggs, Parmigiano cheese, onions, carrot, marjoram, peas, mushrooms.

This “less noble” dish stuffs the neck of a hen. It's served with a traditional green sauce and a pesto that includes vinegar, which in past times, was used to preserve.
